Junmai Ginjo Jisha Saibai Mai
Brewed from Sankei-Nishiki, a newly developed local rice from Nagano
Prefecture. We have been planting this rice since its initial testing phase.
Markedly different from the common sake rice like Miyama Nishiki or
Hitogokochi, it produces a dry and gorgeous sake with a unique acidity and
umami, overflowing with deep, rich flavor.
Aroma: A gentle nose of apple, pear, and melon, with a hint of acacia
flower, bamboo, and mineral aromas.
Serving temperature and suggested pairings:
12~15℃ in a wide-mouth tulip wine glass
smoked Shinshu salmon with lemon
35~40℃ in a guinomi
do-bin-mushi (steamed matsutake mushroom with broth in a teapot accented
with a squeeze of citrus fruit)
