Spirits (barrel-aged shochu)
As the snow melts in spring, the precious sap is collected from the awakening birch trees and added to shochu made from sake lees and rice flour matured in oak barrels. The resulting spirit has a bright amber color and a pleasant taste with a hint of sweetness and aromas of oak and a spring forest.
