Junmai 12
This undiluted sake is flavorful even though it has a low alcohol content of only 12%. Junmai 12 is light and refreshing when chilled yet full-bodied when warmed. Easy on the palate. Mild acidity and umami predominate, with a mildly bitter aftertaste.
Aroma: Melon, green banana, freshly pounded sticky rice, green bamboo, and cypress wood.
Serving temperature and suggested pairings:
12~15℃ in a narrow-mouth tulip wine glass
boiled green onion with vinegar miso and hot pepper
40~45℃ in a small ochoko
grilled tuna with salt
