Junmai Daiginjo Kinmon Nishiki
This junmai daiginjo achieves a harmonious, elegant balance of sweetness and acidity by using Kinmon Nishiki, a rare sake rice native to Nagano.
The palate’s deep, smooth, and lingering aftertaste can be enjoyed either chilled or warmed.
Aroma:
Fresh apple, pear, melon, white peach, and acacia honey, as well as an herbal aroma unique to Kinmon Nishiki, which gives it a special character.
Serving temperature and suggested pairings:
12~15℃ in a wide-mouth tulip wine glass
steamed rainbow trout with thyme and extra virgin olive oil
35~40℃ in a guinomi
grilled scallops in fermented butter sauce with basil
